My warmest welcome to The Paul, Spring Summer 2010.

Our everyday, here at The Paul has been rather hectic of late, but we are finally finished and ready to throw open the doors of this delightful house.

From Thursday April 15, The Paul will be open as usual, this will be our eighth year within Tivoli Gardens - time certainly flys.

Over the past few months we've been out and about travelling, collecting ideas, and being generally, well and truly inspired - scribbling & sketching in endless notebooks, desperately trying to hold an account of what has happened since we last walked the boards of this wonderful house.

Together with Mads Refslund, Torsten Schmidt & Rene Redzepi, we took on 'Madrid Fusion'. An iced, Russia-boardering, north-east Finland certainly moved our boundaries - snow-scootering 28 km across frozen lakes and snow bound Finland'ian forests, only to grill mustard-clad saussison within a snow kissed wooden tipee structure. The Miami adventure was a little warmer - that city, painted pastel-pink and baby-blue. Streaked with neon blubs and Cuban-street-glamour, the daunting task of last year turned out to be a pure delight this time - arté-decorian spendor mixed with a little fresh mint and Havana rum. A drop-off on the way home via New York City, inspiration is abundant in that little village - a multi-cultural, bi-gastronomic melting pot of culinary joy. Daniel was greatness, Jean-Georges superb and young Wylie of WD~50 was truly brilliant. We were 'all Chang'd out' on the Sunday - the Momofuku establishments really are all they are recconded to be... the bun's, the smoked pork sandwichs - believe the hype people!
