Dear Delectable Ones.
Cooking along Copenhagen's Strandvejen was a pleasure, at Rasmus' Skovshoved Hotel & Skodsborg Spa - new flavours were presented, contacts were forged & new delightful friends were made.
Our darling Molteni has now been stoked and from April 15 we'll be roasting, braising and poaching. Salting, smoking and marinating. From the first menu langoustine will bath in an apple, herbed dashi, inspired by Imperial Japan. Native oysters will anoint roasted frogs legs, and 'OCTOPI' will hide beneath a blanket of bacalao foam. Banana caramel, spiced with ginger and our 'Copenhagen Mess' will make her first appearance - guised within rhubarb & custard this time. All will be revealed.
The Paul is open for lunch and dinner from Tuesday to Saturday, from April 16 until the end of September - and for private parties and arrangements only on Sunday & Monday.

PS; 'INCOGNITO ROYALE' won 'World's Best Cookbook - Special Award from the Jury' Paris 2010. Delighted we are, and alongside the 'Best Book Design' from Copenhagens Museum of Industrial Art and New York's GRAPHIS Gold Award - she is becoming a most sought after little edition - so much so that a Russian house has just bought the rights... Morning TV Moscow calling!
PPS; the next instalment of you culinary library will also be published and released by Politikens Forlag during September of 2010. 'PAUL-FOOD-100' - 100+ recipes & stories, food portraits by Line Thit Klein, the graphic designs of Grandmaster Søren Varming. Together with a few hundred of my own photographic works... I do hope you like it.
